Uninstall - Apache -- yes, if you are upgrading to a higher version; that is, unless you really know what you are doing and can manually shut down the other Apache, or change its binding ports, and are good with symlinks.

Uninstall - zlib -- no, zlib is a library and other apps in your distro could depend upon the present specific version. If this particular lib has version data encoded under its name, no overwrite of the original libs would be needed; or a newer version could be specifically separated from an older version of the library via dir placement or version info encoded under its name - resulting in both versions residing on the same system without conflict.

The site seems to be down...
Google chache of http://www.gzip.org/zlib/...

http://64.233.161.104/search?sourceid=navclient&ie=UTF-8&q=cache:http%3A%2F%2Fwww.gzip.org%2Fzlib%2F

(these worked for me, most of the others did not)
http://www.zlib.net/zlib121.zip
http://www.zlib.net/zlib-1.2.1.tar.bz2

If I may be blunt...

Disregard my post and just follow the Guides.

You are confusing yourself.
